  • 4 pieces chicken breasts Boneless, skinless preferred
  • 1/4 cup fresh lime juice
  • 2 tablespoons chili powder
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro (for garnish) Use as desired for garnish

Method
 

Marinating the Chicken
  1. In a bowl, mix lime juice, chili powder, olive oil, garlic powder, salt, and black pepper to create a marinade.
  2. Place the chicken breasts in a resealable bag or bowl and pour the marinade over them.
  3. Seal the bag or cover the bowl and marinate in the refrigerator for at least 30 minutes.
Cooking the Chicken
  1. Preheat the grill or oven to 375°F (190°C).
  2. Grill or bake the chicken for 20-25 minutes, or until cooked through and juices run clear.
Serving
  1. Garnish with fresh cilantro and serve alongside rice, veggies, or in tacos.

Notes

Store leftovers in the fridge for about 3-4 days in an airtight container. For longer storage, freeze for up to 3 months. Thaw in the refrigerator before reheating.
