Marinating the Chicken
- In a bowl, mix lime juice, chili powder, olive oil, garlic powder, salt, and black pepper to create a marinade.
- Place the chicken breasts in a resealable bag or bowl and pour the marinade over them.
- Seal the bag or cover the bowl and marinate in the refrigerator for at least 30 minutes.
Cooking the Chicken
- Preheat the grill or oven to 375°F (190°C).
- Grill or bake the chicken for 20-25 minutes, or until cooked through and juices run clear.
Serving
- Garnish with fresh cilantro and serve alongside rice, veggies, or in tacos.
Notes
Store leftovers in the fridge for about 3-4 days in an airtight container. For longer storage, freeze for up to 3 months. Thaw in the refrigerator before reheating.
