Ingredients
  

For the Chicken
  • 1 lb chicken thighs, boneless and skinless You can also use chicken breasts.
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 4 pieces pita breads
  • to taste Fresh vegetables (lettuce, tomatoes, cucumbers) Feel free to use any veggies you have on hand.
For the Garlic Sauce
  • 1/2 cup mayonnaise Can substitute with yogurt or vegan mayo.
  • 2 cloves garlic (minced) Optionally, lightly toast the garlic for extra flavor.
  • 1 tablespoon lemon juice
  • to taste Salt

Method
 

Preparation
  1. In a bowl, mix olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, and pepper.
  2. Add chicken to the marinade, ensuring it's well coated. Marinate for at least 1 hour or overnight for extra flavor.
Cooking
  1. Preheat the grill or skillet over medium-high heat.
  2. Cook the chicken for about 6-7 minutes per side until fully cooked.
  3. Rest the chicken for a few minutes, then slice thinly.
Garlic Sauce
  1. In a bowl, mix mayonnaise, minced garlic, lemon juice, and salt to taste.
Serving
  1. Serve chicken in pita bread with fresh vegetables and drizzle with garlic sauce.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for about 3 months. Reheat in a skillet for a freshly cooked taste. Don't skip marinating the chicken for maximum flavor.
