  • 2 pieces chicken breasts Boneless, skinless recommended
  • 2 cups fresh tomatoes, diced Can use canned tomatoes if needed
  • 3 cloves garlic, minced Fresh garlic preferred
  • 1/4 cup fresh basil, chopped Use fresh for best flavor
  • 1/4 cup grated Parmesan cheese Add more for a cheesier dish if desired
  • 2 tablespoons olive oil For cooking chicken
  • Salt and pepper, to taste For seasoning

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Add diced tomatoes and cook for about 5 minutes, until soft.
  6. Stir in fresh basil and Parmesan cheese.
  7. Return chicken to the skillet, spooning the sauce over the top.
  8. Cook for an additional 2-3 minutes to heat through.
  9. Serve hot!

Notes

For the best flavor, use fresh ingredients. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat in a skillet or microwave.
