Ingredients
  

Main Ingredients
  • 3-4 pieces boneless, skinless chicken breasts Sliced into bite-sized pieces
  • Lo Mein noodles (fresh or dried) Amount based on package instructions
  • 1 piece red bell pepper Chopped
  • 1 piece yellow bell pepper Chopped
  • 2 pieces carrots Thinly sliced
  • 2 pieces green onions Chopped
Sauce Ingredients
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Method
 

Preparation
  1. Gather all ingredients and chop vegetables into bite-sized pieces.
Cooking Noodles
  1. Boil Lo Mein noodles according to package instructions until al dente; drain and set aside.
Cooking Chicken
  1. Heat a large skillet or wok over medium-high heat. Add sesame oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove from skillet.
Cooking Vegetables
  1. In the same pan, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
Combining Ingredients
  1. Return cooked chicken to the skillet with vegetables. Add lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices. Toss everything together until well mixed.
Serving
  1. Serve hot with extra soy sauce if desired.

Notes

Store in an airtight container in the fridge for 3-4 days. Can be frozen for up to 3 months. Reheat with a splash of water or soy sauce to revive the dish.
