  • 1 pound smoked sausage halal-certified, no pork
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix make sure it’s halal-certified
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese or a mix of your favorite cheeses
  • 1/2 cup sour cream optional, for serving
  • Fresh parsley, chopped optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) for the perfect roast.
  2. Wash and cut the baby potatoes into halves or quarters for even cooking.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, mix together ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large bowl, drizzle the halved potatoes with olive oil and sprinkle with half of the ranch seasoning mix. Toss to coat evenly.
  6. Line a baking sheet with parchment paper or lightly grease it.
  7. Spread the seasoned potatoes in a single layer on the baking sheet.
  8. Scatter the sliced smoked sausage over the potatoes.
Cooking
  1. Roast for 35-40 minutes, stirring halfway through, until potatoes are golden brown and tender.
  2. Sprinkle the shredded cheddar cheese over the potatoes and sausage. Bake for another 5 minutes, until the cheese is melty and bubbly.
Serving
  1. Once melted, remove from the oven and garnish with freshly chopped parsley. Serve hot with a dollop of sour cream, if desired.

Notes

Don’t skip the roasting time for crispier potatoes. Feel free to swap ingredients and try different types of cheese or add your favorite veggies. For more flavor, marinate the sausage in leftover ranch seasoning.
