Preparation
- Preheat the Oven: Set your oven to 400°F (200°C). This ensures the potatoes will roast nicely.
- Prep the Potatoes: Wash the baby potatoes and cut them in halves or quarters to help with even cooking.
- Slice the Smoked Sausage: Cut the sausage into 1/4-inch thick rounds for even cooking.
- Combine the Seasonings: In a small bowl, whisk together the ranch seasoning, garlic powder, onion powder, and black pepper.
- Coat the Potatoes: In a large bowl, drizzle the halved potatoes with olive oil and sprinkle with half of the ranch seasoning mixture. Toss to coat.
- Prepare the Baking Sheet: Line a baking sheet with parchment paper for easy cleanup.
Cooking
- Spread the Potatoes on the Sheet: Lay the seasoned potatoes in a single layer on the sheet.
- Add the Sausage: Scatter the sliced sausage over the potatoes.
- Roast in the Oven: Bake for 35–40 minutes, stirring halfway through, until the potatoes are golden and tender.
- Add the Cheese: Remove from the oven, sprinkle cheese on top, and return to bake for an additional 5 minutes until it’s melted and bubbly.
- Garnish and Serve: Finish with fresh parsley and serve hot with a dollop of sour cream if desired.
Notes
