  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C). This ensures the potatoes will roast nicely.
  2. Prep the Potatoes: Wash the baby potatoes and cut them in halves or quarters to help with even cooking.
  3. Slice the Smoked Sausage: Cut the sausage into 1/4-inch thick rounds for even cooking.
  4. Combine the Seasonings: In a small bowl, whisk together the ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Coat the Potatoes: In a large bowl, drizzle the halved potatoes with olive oil and sprinkle with half of the ranch seasoning mixture. Toss to coat.
  6. Prepare the Baking Sheet: Line a baking sheet with parchment paper for easy cleanup.
Cooking
  1. Spread the Potatoes on the Sheet: Lay the seasoned potatoes in a single layer on the sheet.
  2. Add the Sausage: Scatter the sliced sausage over the potatoes.
  3. Roast in the Oven: Bake for 35–40 minutes, stirring halfway through, until the potatoes are golden and tender.
  4. Add the Cheese: Remove from the oven, sprinkle cheese on top, and return to bake for an additional 5 minutes until it’s melted and bubbly.
  5. Garnish and Serve: Finish with fresh parsley and serve hot with a dollop of sour cream if desired.

Notes

Leftovers can be stored in the fridge for 3–5 days or frozen for up to 2 months. Reheat in the oven or microwave before serving. For variations, consider using different cheeses or plant-based sausage for a vegan option.
