Ingredients

Main Ingredients
  • 1 pound Boneless Skinless Chicken Breasts, cut into bite-sized chunks
  • 12 oz Rotini Pasta (can substitute with penne, farfalle, or fusilli)
  • 2 tablespoons Olive Oil (can replace with canola or vegetable oil)
  • 2 tablespoons Cajun Seasoning (substitute with a different spice mix for a milder taste)
  • 1 teaspoon Garlic Powder (you can use fresh minced garlic)
  • 1/2 teaspoon Onion Powder (omit if unavailable)
  • 4 cloves Garlic, minced
  • 1 tablespoon Butter (you can substitute with olive oil for dairy-free)
  • 1 cup Heavy Cream (light cream or coconut cream can be alternatives)
  • 1/2 cup Chicken Broth (vegetable broth can be used for a vegetarian option)
  • 1 cup Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1/2 cup Cheddar Cheese, shredded
  • 1/4 cup Fresh Parsley, chopped

Method

Cooking the Pasta
  1. In a large pot, cook the rotini according to the package instructions. Drain and set aside.
Sautéing the Chicken
  1. In a skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until the chunks are browned and fully cooked, about 5-7 minutes.
Adding Aromatics
  1. Stir in the minced garlic and cook for another minute until fragrant.
Creamy Goodness
  1. Lower the heat and add the butter, heavy cream, and chicken broth. Stir until combined and let it simmer for a few minutes.
Cheesy Mix
  1. Throw in the mozzarella, Parmesan, and cheddar cheeses. Mix until everything is melted and creamy.
Combining
  1. Finally, toss the cooked rotini into the cheesy mixture. Stir until evenly coated.
Garnish and Serve
  1. Top with fresh parsley for a pop of color. Serve warm and enjoy your cozy night!

Notes

Use extra cheese or crushed red pepper for added flavor. Store leftovers in the fridge for 3-4 days or freeze for up to 2 months. When reheating, add a splash of chicken broth or cream.
