Preparation
- Preheat the oven to 350°F.
- Heat a skillet over medium-high heat, add ground beef, and cook until no longer pink, draining excess fat.
- In a mixing bowl, combine biscuit mix and water, stir until well mixed, then press the dough into a greased 9x13'' casserole dish.
- Bake the biscuit base in the preheated oven for 5-8 minutes until lightly golden.
- Stir in chopped onions and red bell pepper to the cooked beef, add taco seasoning, and cook for about 4 minutes before removing from heat.
Assembly
- Spread the cooked beef mixture over the baked biscuit base.
- In a separate bowl, mix sour cream, mayonnaise, green chiles, ¾ cup cheddar cheese, and garlic powder until smooth; spread this over the beef layer.
- Dollop small spoonfuls of salsa over the sour cream layer and sprinkle the remaining cheese on top.
Baking
- Bake the dish uncovered in the oven for 30 minutes or until hot and bubbly.
Notes
Serve hot with fresh cilantro or additional salsa. It pairs well with a crisp salad or roasted vegetables. Store in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven or microwave.
