  • 1.5 pounds Lean Ground Beef
  • 1 medium Red Bell Pepper, seeded and chopped
  • 1 medium Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2.5 cups Biscuit Mix (like Bisquick)
  • 1 cup Water
  • 1/2 cup Sour Cream
  • 1/2 cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1.5 cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • 1/2 cup Salsa, mild

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Heat a skillet over medium-high heat, add ground beef, and cook until no longer pink, draining excess fat.
  3. In a mixing bowl, combine biscuit mix and water, stir until well mixed, then press the dough into a greased 9x13'' casserole dish.
  4. Bake the biscuit base in the preheated oven for 5-8 minutes until lightly golden.
  5. Stir in chopped onions and red bell pepper to the cooked beef, add taco seasoning, and cook for about 4 minutes before removing from heat.
Assembly
  1. Spread the cooked beef mixture over the baked biscuit base.
  2. In a separate bowl, mix sour cream, mayonnaise, green chiles, ¾ cup cheddar cheese, and garlic powder until smooth; spread this over the beef layer.
  3. Dollop small spoonfuls of salsa over the sour cream layer and sprinkle the remaining cheese on top.
Baking
  1. Bake the dish uncovered in the oven for 30 minutes or until hot and bubbly.

Notes

Serve hot with fresh cilantro or additional salsa. It pairs well with a crisp salad or roasted vegetables. Store in the fridge for 3-4 days or freeze for up to 3 months. Reheat in the oven or microwave.
