  • 2 medium sweet potatoes, diced

  • 3 cloves garlic, minced

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are tender.
  3. While the sweet potatoes are cooking, slice the sausage.
  4. Once tender, add the sausage to the skillet and cook for another 5-7 minutes, until browned and cooked through.
  5. In a small bowl, mix together the honey, minced garlic, salt, and pepper.
  6. Pour the honey garlic sauce over the sausage and sweet potatoes, stirring to coat everything evenly.
  7. Cook for an additional 2-3 minutes until the sauce thickens a bit.
  8. Serve warm, garnished with chopped green onions if desired.

Timing is key for even cooking. Chop sweet potatoes into similar sizes. Optional ingredient swaps can include chicken or turkey sausage for a lighter option, or add greens like spinach or kale towards the end for more nutrition.
