Crust Ingredients
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
Filling Ingredients
  • 4 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs at room temperature
  • 2 cups diced apples use a mix of sweet and tart
  • 1 cup caramel sauce plus extra for drizzling
  • 1 teaspoon ground cinnamon add nutmeg for variation

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar to form a crust. Press the mixture into the bottom of a greased 9x13 inch baking dish.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing well.
  4. Add eggs one at a time, beating well after each addition.
  5. Fold in diced apples and cinnamon. Pour the cream cheese mixture over the crust.
Baking
  1. Bake for 35-40 minutes or until the center is set.
Finishing
  1. Let cool and then drizzle with caramel sauce before slicing into bars.

Notes

For serving, stack bars on a platter, drizzle with extra caramel, and serve with whipped cream or vanilla ice cream. Store leftovers in the fridge for about a week or freeze for up to three months.
