Ingredients
  

Main Ingredients
  • 1 lb chicken breast, cooked and shredded You can use shredded rotisserie chicken for ease.
  • 2 cups chicken broth
  • 1 can white beans, drained and rinsed
  • 1 cup andouille sausage, sliced Can substitute with smoked sausage or turkey sausage.
  • 1 cup shrimp, peeled and deveined
  • 1 onion, diced
  • 2 cloves garlic, minced Toasting the garlic enhances flavor.
  • 2 cups diced green chilies
  • 2 tsp Cajun seasoning Adjust to taste.
  • to taste salt and pepper
  • 1 tbsp olive oil For sautéing.

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and garlic, and sauté until translucent.
  3. Stir in the andouille sausage and cook until browned.
  4. Add the cooked chicken, chicken broth, white beans, green chilies, and Cajun seasoning.
  5. Bring to a simmer and let cook for about 20 minutes.
  6. Add shrimp in the last 5 minutes of cooking.
  7. Season with salt and pepper to taste.
  8. Serve warm.

Notes

Store leftovers in the fridge for up to 3 days or freeze in an airtight container for about 3 months. When ready to eat, reheat on the stove or in the microwave.
