- In a large pot, heat olive oil over medium heat.
- Add diced onion and garlic, and sauté until translucent.
- Stir in the andouille sausage and cook until browned.
- Add the cooked chicken, chicken broth, white beans, green chilies, and Cajun seasoning.
- Bring to a simmer and let cook for about 20 minutes.
- Add shrimp in the last 5 minutes of cooking.
- Season with salt and pepper to taste.
- Serve warm.
Notes
Store leftovers in the fridge for up to 3 days or freeze in an airtight container for about 3 months. When ready to eat, reheat on the stove or in the microwave.
