  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation
  1. In a large pot, cook the pasta according to package instructions. Drain and set aside.
  2. In the same pot, add the sliced Cajun sausage and cook over medium heat until browned.
  3. Add the bell pepper, onion, and garlic; sauté until the vegetables are soft.
  4. Stir in the diced tomatoes, heavy cream, and Cajun seasoning; let it simmer for about 5 minutes.
  5. Add the cooked pasta and shredded cheese; stir until well combined and the cheese is melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For variations, consider using whole wheat or gluten-free pasta. Adjust Cajun seasoning according to spice tolerance. You can also add spinach or zucchini for extra veggies, or swap sausages for chicken or plant-based options. Refrigerate leftovers for 3-4 days or freeze for up to 3 months.
