Ingredients
  

For the pie filling
  • 1.5 cups honey Caramelized for depth of flavor
  • 0.25 cup sugar To help caramelize the honey
  • 0.25 cup unsalted butter
  • 3 large eggs Room temperature
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract For flavor
  • 0.5 teaspoon sea salt
  • 1 piece pie crust Store-bought or homemade

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, combine honey and sugar. Cook until the mixture is burnt and caramelized, stirring occasionally.
  3. Add butter to the saucepan and stir until melted. Let it cool slightly.
  4. In a bowl, whisk together the eggs, heavy cream, vanilla extract, and sea salt. Slowly add the caramelized honey mixture while whisking.
  5. Pour the filling into the prepared pie crust.
Baking
  1. Bake in the preheated oven for about 40-45 minutes, or until set.
  2. Let cool before serving.

Notes

Pairs well with vanilla ice cream or fresh whipped cream. Sprinkle a little sea salt on top for a sweet and salty combination. Store leftovers in an airtight container in the fridge for 3-4 days.
