Preparation
- Preheat your oven to 350°F (175°C).
- In a saucepan over medium heat, combine honey and sugar. Cook until the mixture is burnt and caramelized, stirring occasionally.
- Add butter to the saucepan and stir until melted. Let it cool slightly.
- In a bowl, whisk together the eggs, heavy cream, vanilla extract, and sea salt. Slowly add the caramelized honey mixture while whisking.
- Pour the filling into the prepared pie crust.
Baking
- Bake in the preheated oven for about 40-45 minutes, or until set.
- Let cool before serving.
Notes
Pairs well with vanilla ice cream or fresh whipped cream. Sprinkle a little sea salt on top for a sweet and salty combination. Store leftovers in an airtight container in the fridge for 3-4 days.
