Ingredients
  

For the filling
  • 2 cups shredded rotisserie chicken You can use pre-shredded chicken to save time.
  • 1 cup cheddar cheese Feel free to swap out for other types of cheese.
  • 1 cup mozzarella cheese
  • 1/2 cup buffalo sauce Adjust based on spice tolerance.
  • 1 packet ranch seasoning This adds creaminess to the filling.
For assembly
  • 12 pieces egg roll wrappers Use frozen wrappers, thawed before use.
  • as needed oil For frying or to spray in air fryer.

Method
 

Preparation
  1. In a bowl, mix the shredded rotisserie chicken, cheddar cheese, mozzarella cheese, buffalo sauce, and ranch seasoning until everything is well combined.
  2. Lay an egg roll wrapper on a clean surface.
  3. Place a spoonful of the chicken mixture in the center of the wrapper and fold it according to the package instructions.
Cooking
  1. Preheat the air fryer to 375°F (190°C).
  2. Lightly spray the egg rolls with oil and arrange them in the air fryer basket in a single layer.
  3. Cook for about 10-12 minutes or until golden brown and crispy, flipping halfway through.
  4. Alternatively, fry them in hot oil or bake at 425°F (220°C) for about 15-20 minutes until crispy.

Notes

Leftover egg rolls can be stored in the fridge for up to 3-4 days or frozen tightly for later use. Reheat in air fryer or oven for best results.
