Ingredients
  

For the Tomato Mixture
  • 4 Roma tomatoes
  • 0.25 cup basil leaves, chopped More for garnish
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • to taste Salt
For the Cheese Mixture
  • 8 oz feta cheese block, crumbled
  • 0.5 block cream cheese (4 oz) Use room temperature for easier blending
  • 0.5 cup sour cream Can swap for Greek yogurt for a healthier option
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • to taste Red pepper flakes
  • to taste Parmesan cheese, freshly grated

Method
 

Preparation of Tomato Mixture
  1. Chop the tomatoes and toss them into a bowl.
  2. Mix in the chopped basil and minced garlic.
  3. Drizzle with olive oil and balsamic vinegar; add salt to taste.
  4. Let the mixture sit for about 10-15 minutes to let the flavors mingle.
Preparation of Cheese Mixture
  1. In another bowl, combine softened cream cheese and sour cream.
  2. Fold in crumbled feta, minced garlic, lemon juice, and olive oil; season with salt.
Assembly
  1. Layer by spooning the cheese mixture at the bottom of a serving dish, then top with the tomato-basil mixture.
  2. Garnish with extra basil, Parmesan, and red pepper flakes before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. Prepare a day ahead and add fresh toppings before serving for maximum flavor.
