Preparation
- Preheat your oven to 400 degrees F.
- Cook the turkey bacon according to package instructions until crispy. Remove from the pan and chop into small chunks.
- In the same pan, add olive oil, then toss in the chopped broccoli and onion. Sprinkle with salt and pepper, and sauté for 5-10 minutes until softened.
- In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until everything is nicely blended.
- Remove the veggies from heat. Mix them with the chopped turkey bacon in a greased baking dish, spreading it evenly.
- Pour the egg mixture over the top, ensuring it covers everything. Sprinkle extra cheese on top if desired.
- Bake in the oven for 20 minutes. Let cool, then cut into squares and serve!
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, freeze for 1-2 months. Reheat in the microwave before serving.
