  • 1 head broccoli, chopped Fresh broccoli for best flavor.
  • 1/2 large yellow onion, diced
  • 5 slices turkey bacon Cook until crispy.
  • 8 large eggs
  • 1/2 cup shredded cheddar cheese Plus more for topping if desired.
  • 1 tbsp olive oil For sautéing vegetables.
  • 1/2 tsp garlic powder
  • 1/4 tsp salt Adjust to taste.

Method
 

Preparation
  1. Preheat your oven to 400 degrees F.
  2. Cook the turkey bacon according to package instructions until crispy. Remove from the pan and chop into small chunks.
  3. In the same pan, add olive oil, then toss in the chopped broccoli and onion. Sprinkle with salt and pepper, and sauté for 5-10 minutes until softened.
  4. In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until everything is nicely blended.
  5. Remove the veggies from heat. Mix them with the chopped turkey bacon in a greased baking dish, spreading it evenly.
  6. Pour the egg mixture over the top, ensuring it covers everything. Sprinkle extra cheese on top if desired.
  7. Bake in the oven for 20 minutes. Let cool, then cut into squares and serve!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, freeze for 1-2 months. Reheat in the microwave before serving.
