Ingredients
  

Dry Ingredients
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 3/4 cup milk Can substitute with almond or other non-dairy milk.
  • 1 each egg Substitute with flax egg for vegan option.
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F and grease a mini muffin pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, egg, melted butter, and vanilla.
  4. Gently combine the wet and dry ingredients until just mixed—don’t overdo it!
  5. Scoop the batter into the muffin pan, filling each cup about 2/3 full.
  6. Bake for 10–12 minutes until they’re golden and fluffy.
  7. Let them cool slightly, then serve warm with syrup!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in the microwave for 10-15 seconds.
