Preparation
- Preheat your oven to 375°F and grease a mini muffin pan.
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla.
- Gently combine the wet and dry ingredients until just mixed—don’t overdo it!
- Scoop the batter into the muffin pan, filling each cup about 2/3 full.
- Bake for 10–12 minutes until they’re golden and fluffy.
- Let them cool slightly, then serve warm with syrup!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in the microwave for 10-15 seconds.
