  • 6 eggs
  • 1 cup milk
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 2 cups cubed bread Use stale bread for sturdier texture
  • 1/2 cup chopped bell peppers Any color bell pepper works
  • 1/2 cup chopped onions
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk until well mixed.
  3. Add the ham, cheese, bread, bell peppers, and onions. Season with salt and pepper.
  4. Pour the mixture into a greased baking dish and spread it evenly.
Baking
  1. Bake for 30-35 minutes until the eggs are set and the top is lightly golden.
  2. Allow to cool for a few minutes before serving.

Notes

Serve cut into squares with fresh herbs or salsa. Casserole stores well in the fridge for 3-4 days and can be frozen for up to 3 months.
