  • 4 pieces Chicken thighs Bone-in, skin-on recommended for more flavor
  • 1 cup Catalina dressing Use your favorite brand
  • 1 cup Pineapple Fresh or canned, chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper Freshly ground for best flavor
  • 2 tablespoons Oil For cooking; can use olive or vegetable oil

Method

  1. In a large skillet, heat oil over medium heat.
  2. Add the chicken thighs and brown them on both sides until golden.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, combine the Catalina dressing and pineapple.
  5. Return the chicken to the skillet, cover it, and let it simmer for about 30 minutes or until the chicken is cooked through.
  6. Serve hot with your favorite sides.

Notes

This dish keeps well; store leftovers in the fridge for up to 3 days. You can also freeze for later. For added flavor, consider sautéing some vegetables like bell peppers or onions alongside the chicken.
