Preparation
- Preheat your oven to 325°F (163°C). Line an 8-inch square light metal baking pan with nonstick foil and set aside.
- In a blender, combine black beans, eggs, oil, vanilla, and coffee. Blend until smooth.
- In a bowl, whisk together cocoa powder, baking soda, salt, and brown sugar.
- Pour the bean mixture into the dry ingredients and stir until smooth. Fold in the chocolate chips if using.
- Pour the batter into the prepared pan and smooth the top.
Baking
- Bake for 25 minutes, or until the top springs back when pressed and the center is stable.
- Let cool and chill before slicing into squares.
Notes
Store leftovers covered in the fridge for up to 5 days or freeze for up to three months. Reheating gently in the microwave will restore freshness.
