  • 1 can standard can black beans, drained and rinsed well Use canned black beans for convenience.
  • 2 pieces eggs, at room temperature
  • 1/4 cup neutral oil (like grapeseed, canola, peanut, or vegetable)
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons strong brewed coffee Use freshly brewed for better flavor.
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 3/4 cup packed light brown sugar
  • 3 ounces semi-sweet or dark chocolate chips (optional) Skip for a lighter brownie.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line an 8-inch square light metal baking pan with nonstick foil and set aside.
  2. In a blender, combine black beans, eggs, oil, vanilla, and coffee. Blend until smooth.
  3. In a bowl, whisk together cocoa powder, baking soda, salt, and brown sugar.
  4. Pour the bean mixture into the dry ingredients and stir until smooth. Fold in the chocolate chips if using.
  5. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 25 minutes, or until the top springs back when pressed and the center is stable.
  2. Let cool and chill before slicing into squares.

Notes

Store leftovers covered in the fridge for up to 5 days or freeze for up to three months. Reheating gently in the microwave will restore freshness.
