Ingredients
  

Main ingredients
  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • to taste Salt and pepper
For the sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Can be adjusted for spice level
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

Preparation
  1. Cook your rice according to the package instructions. Set it aside once ready.
  2. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.
  2. Whisk together the sauce ingredients in a small bowl: mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust to your liking.
  3. Once the chicken is cooked, add mixed veggies and sauté for an additional 2-3 minutes until they’re just tender.
  4. Remove from heat, pour the sauce over the chicken and veggies, stirring to coat everything. Serve over rice.

Notes

This dish keeps well in the fridge for up to 3 days. For longer storage, freeze in an airtight container and reheat on the stove or microwave with a splash of water.
