  • 3 large ripe bananas About 1 ½ cups mashed
  • 2 cups rolled oats
  • cup honey or pure maple syrup
  • 2 large eggs Can be substituted with flax egg for vegan version
  • 1 tsp baking powder Key for texture
  • 1 tsp vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, honey (or maple syrup), eggs, baking powder, and vanilla extract; stir until well combined.
  4. Grease an 8×8-inch baking dish or line it with parchment paper.
  5. Pour the mixture into the prepared dish and spread it evenly.
  6. Bake for 25-30 minutes until golden brown.
  7. Let it cool for at least ten minutes before slicing into squares.

Notes

These bars last for about 4-5 days in the fridge. Keep them in an airtight container for best texture. Can be frozen for up to three months.
