  • 1 pound Italian sausage (mild or spicy)
  • 4 medium potatoes, diced
  • 1 medium bell pepper, diced
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Season according to preference
  • for garnish Fresh parsley

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the diced potatoes, bell pepper, onion, olive oil, garlic powder, salt, and pepper until everything is evenly coated.
  3. Spread the veggies out on a baking sheet.
  4. Nestle the Italian sausages among the veggies on the sheet.
Cooking
  1. Bake for about 25-30 minutes, or until the sausages are cooked through and the potatoes are golden and crispy.
  2. Garnish with parsley before serving.

Notes

For added flavor, include fresh herbs or crushed red pepper flakes. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
