Preparation
- Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
- Roll out the puff pastry and cut it into 12 equal squares. Press each square into the muffin cups.
- Place a cube of brie into each pastry cup, then top with a spoonful of cranberry sauce and a sprinkle of chopped candied pecans (if using).
Baking
- Bake for 15–18 minutes or until the pastry is golden brown and bubbly.
- Cool for 5 minutes, then garnish with a sprig of rosemary before serving.
Notes
Store leftovers in an airtight container in the fridge for about 3 days. You can freeze these bites before baking – just bake directly from the freezer and add a minute or two to the bake time.
