Ingredients
  

Pastry and Filling
  • 1 sheet puff pastry, thawed
  • 4 oz brie cheese, cut into 12 cubes
  • ½ cup cranberry sauce (store-bought or homemade)
  • 2 tbsp candied pecans, chopped (optional) For added crunch
  • 1 sprig fresh rosemary (optional) For garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
  2. Roll out the puff pastry and cut it into 12 equal squares. Press each square into the muffin cups.
  3. Place a cube of brie into each pastry cup, then top with a spoonful of cranberry sauce and a sprinkle of chopped candied pecans (if using).
Baking
  1. Bake for 15–18 minutes or until the pastry is golden brown and bubbly.
  2. Cool for 5 minutes, then garnish with a sprig of rosemary before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. You can freeze these bites before baking – just bake directly from the freezer and add a minute or two to the bake time.
