Preparation
- In a bowl, mix the mango puree, soy sauce, honey, garlic, ginger, cornstarch, salt, and pepper to create a marinade.
- Marinate the chicken strips in the mango glaze for at least 30 minutes.
Cooking
- Preheat a pan or grill over medium heat.
- If using skewers, thread the marinated chicken onto them.
- Cook the chicken for about 5-7 minutes on each side until fully cooked and slightly caramelized.
Serving
- Serve as appetizers or as a main dish alongside fresh veggies, steamed rice, or mini tacos.
Notes
For best results, use fresh mango for the puree. You can also add a kick by tossing in some sriracha to the marinade. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
