Ingredients
  

For the marinade
  • 1 cup mango puree Use fresh or store-bought
  • 2 tablespoons soy sauce
  • 1 tablespoon honey Can be substituted with brown sugar or agave
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
For cooking
  • 1 lb chicken breast, cut into strips
  • Oil for cooking
  • Skewers (if needed)

Method
 

Preparation
  1. In a bowl, mix the mango puree, soy sauce, honey, garlic, ginger, cornstarch, salt, and pepper to create a marinade.
  2. Marinate the chicken strips in the mango glaze for at least 30 minutes.
Cooking
  1. Preheat a pan or grill over medium heat.
  2. If using skewers, thread the marinated chicken onto them.
  3. Cook the chicken for about 5-7 minutes on each side until fully cooked and slightly caramelized.
Serving
  1. Serve as appetizers or as a main dish alongside fresh veggies, steamed rice, or mini tacos.

Notes

For best results, use fresh mango for the puree. You can also add a kick by tossing in some sriracha to the marinade. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
