  • 1/4 cup maple syrup or honey Maple syrup for a vegan option.
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. Next, stir in rolled oats (or almond flour), cinnamon, and baking powder until everything’s well combined.
  4. Gently fold in the diced apples – no need to mash!
Baking
  1. Pour the batter into your prepared baking dish and spread it out evenly.
  2. Bake for 35–40 minutes, or until golden and a toothpick comes out clean.

  1. Let it cool slightly before slicing and serving.
