Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- In a bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla until smooth.
- Next, stir in rolled oats (or almond flour), cinnamon, and baking powder until everything’s well combined.
- Gently fold in the diced apples – no need to mash!
Baking
- Pour the batter into your prepared baking dish and spread it out evenly.
- Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
Serving
- Let it cool slightly before slicing and serving.
- Serve warm, topped with a drizzle of extra maple syrup or a dollop of Greek yogurt.
Notes
Store leftover bake in the fridge for up to 5 days or freeze it for about 3 months. Reheat in the microwave or oven.
