- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a bowl, whisk together the cottage cheese, eggs, maple syrup, and vanilla until creamy.
- Stir in your oats (or almond flour), cinnamon, and baking powder.
- Fold in the diced apples gently.
- Pour the mixture into the baking dish and spread it evenly.
- Bake for 35-40 minutes until it’s golden and a toothpick comes out clean.
- Let it cool slightly before slicing and serving.
Notes
Serve warm and top with Greek yogurt or extra maple syrup. Store in the fridge for 3-4 days or freeze for up to 2-3 months.
