Preparation
  1. Preheat your oven to 350°F (175°C).

  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, then stir in the vanilla extract and apple cider.
  5. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet, spacing them out.
Baking
  1. Bake for 10-12 minutes until they turn golden brown.
  2. Let them cool completely.
  3. Once cooled, sandwich the cookies with caramel sauce.
