Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the chicken, cooked rice, cream of chicken soup, sour cream, milk, and 1/2 cup of the cheddar cheese. Season with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the remaining cheddar cheese and breadcrumbs on top.
Baking
- Bake for 25-30 minutes or until bubbly and golden on top.
- Garnish with green onions if desired and serve warm.
Notes
For a twist, try adding BBQ sauce, or make it vegetarian with chickpeas. This casserole can be prepared ahead of time and stored in the fridge.
