  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 2 cups cooked rice Any type of cooked rice works.
  • 2 cups cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup sour cream Adds creaminess.
  • 1 cup shredded cheddar cheese Diverse cheese options possible.
  • 1/2 cup milk Adjust to preference.
  • 1/2 cup breadcrumbs Can use panko or crushed crackers.
  • to taste Salt and pepper Season to preference.
Optional Garnish
  • to taste Green onions For garnish, if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, cooked rice, cream of chicken soup, sour cream, milk, and 1/2 cup of the cheddar cheese. Season with salt and pepper to taste.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. Sprinkle the remaining cheddar cheese and breadcrumbs on top.
Baking
  1. Bake for 25-30 minutes or until bubbly and golden on top.
  2. Garnish with green onions if desired and serve warm.

Notes

For a twist, try adding BBQ sauce, or make it vegetarian with chickpeas. This casserole can be prepared ahead of time and stored in the fridge.
