  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 cup onion, chopped
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1 cup cream of mushroom soup Can substitute with homemade or other cream soups.
  • 2 cups frozen mixed vegetables Can use any available mixed veggies.
  • to taste Salt and pepper Don't forget to season well!
  • 2 cups mashed potatoes Can use homemade for a fresher twist.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onions and sliced mushrooms to the beef and cook until soft.
  4. Stir in beef broth, cream of mushroom soup, and frozen mixed vegetables; season with salt and pepper.
Assembly
  1. In a greased baking dish, layer the beef mixture.
  2. Spread the mashed potatoes on top.
Baking
  1. Bake for 30-35 minutes or until heated through and golden on top.
  2. Serve warm and enjoy!

Notes

For variation, try using lentils or chickpeas for a vegan option. Store leftovers in the fridge for 3-4 days or freeze them for up to three months.
