Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef with the onions and bell peppers until fully cooked. Drain any excess fat.
- Stir in the frozen mixed vegetables, beef broth, garlic powder, onion powder, salt, and pepper.
Assembly
- In a baking dish, spread the beef mixture evenly.
- Spoon mashed potatoes over the top of the beef mixture.
Baking
- Bake in the preheated oven for 30-35 minutes, or until heated through and slightly golden on top.
- Let it cool slightly before serving.
Notes
For extra flavor, use fresh herbs like parsley or thyme; you can also add cheese on top before baking. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
