Ingredients
  

Main Ingredients
  • 1 lb ground beef Can substitute with turkey or meat alternative.
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cups frozen mixed vegetables Substitute with preferred vegetables.
  • 2 cups mashed potatoes Fresh or store-bought.
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with the onions and bell peppers until fully cooked. Drain any excess fat.
  3. Stir in the frozen mixed vegetables, beef broth, garlic powder, onion powder, salt, and pepper.
Assembly
  1. In a baking dish, spread the beef mixture evenly.
  2. Spoon mashed potatoes over the top of the beef mixture.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until heated through and slightly golden on top.
  2. Let it cool slightly before serving.

Notes

For extra flavor, use fresh herbs like parsley or thyme; you can also add cheese on top before baking. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
